L-Taurine- always considered a conditionally essential amino acid, it differs from common amino acids both for the chemical aspect (presence of the sulphonic group instead of the carboxylic one), and for the functional one, not being part of the protein synthesis. The 2 aminoethanosulfonic acid (taurine) it is mainly synthesized in the liver, in the sulfinic acid pathway of cysteine, to be subsequently distributed to various tissues, especially the heart, skeletal muscle and brain. Taurine is defined as a conditionally essential amino acid, as the concentrations produced endogenously they are not always able to satisfy physiological needs, thus having to resort to food sources of taurine. Introduced through products of animal origin, it is absorbed in the intestine through two different mechanisms, which involve the PAT1 transporter when taurine is present in high concentrations and of TauT, when instead the levels of this molecule tend to decrease. After dosing, the blood peak is generally reached around 90 minutes and returns to baseline after 7 hours.
Although taurine is not part of the protein synthesis processes, it guarantees the synthesis of bile salts, thus allowing correct lipid absorption; it also intervenes in regulating cellular hydrosaline flow, in stabilizing cell membranes, in modulating the immune response, and from the latest experimental evidence also in mediating an "antidepressant and antiepileptic action, as well as cardioprotective action. A recent study has also proposed a new role of taurine in improving the lipid profile in obese subjects, while the antidiabetic role has been reconsidered, which seems to occur not in assisting the insulin action, but in protecting the pancreatic beta cell from the oxidative insult.
