What is Hummus?
Hummus is a typical culinary preparation of the Middle East.
Hummus is an Arabic noun present in the vocabulary of many countries (albeit with different pronunciations and accents) which, in their culinary tradition, include this thick accompanying sauce based on legumes (throughout the Middle East ... up to Turkey and Greece).
Preparation of the "Hummus
Hummus is a cream obtained by combining: mixture of chickpeas, mixture of sesame seeds or sesame butter [tahine or tahina], oil, lemon and spices.
Ingredients for about 500g of Hummus: 150g dried chickpeas, 10g sesame paste [tahini or tahini], juice of 2 lemons, 30g extra virgin olive oil, 1 clove garlic, 10g cumin, 5g chopped or powdered chilli, 10g chopped parsley (1 tuft), salt QB, hot water QB (to obtain the desired consistency of the mixture).
Preparation of the "Hummus: soak the chickpeas for one night; rinse them, cook them in cold water (pressure or in a saucepan) and drain them.
Separately, in a pan, add a tablespoon of oil + chilli + cumin + garlic and let it HEAT over low heat (be careful not to burn the chilli pepper or the stinging fumes will make the air unbreathable and make your eyes water) and in a second, add the chickpeas and leave to flavor for about 2 ".
Squeeze the lemons and chop the parsley.
"Mix" or blend the contents of the pan by adding the sesame paste + lemon juice + 2 tablespoons of raw extra virgin olive oil and add water until you reach the desired consistency.
Serve the Hummus in a wooden bowl and garnish / sprinkle with chopped parsley and chilli, accompanying slices of unleavened bread or toasted pita bread and some falafel.
