Balsamic vinegar of Modena is a typical Italian food which, since 3 July 2009, has enjoyed the IGP (Protected Geographical Indication) * recognition.
Like salt, spices, soy sauce, etc., vinegars belong to the condiments group; unlike oil, however, they have an almost irrelevant energy content. It is however necessary to specify that balsamic vinegar, compared to other types of vinegar (wine, apples, rice, etc.), contains (albeit few) calories from sugars . It is widely used in the kitchen to enrich raw and cooked, cold and hot dishes.* Note: Balsamic vinegar of Modena is NOT synonymous with "traditional" balsamic vinegar of Modena, which instead enjoys the recognition of "Protected Designation of Origin"; later we will understand the difference better.
