- 400 g of zucchini
- 1 piece of ginger
- Half pomegranate fruit
- 10 g of walnut kernels
- q.s. of pepper
- q.s. of salt
- 10 g of chia seeds
- 200 g of coppery tomatoes
- 3 tablespoons of extra virgin olive oil
- 1 sprig of parsley
- Untreated lemon juice and zest
- 1 teaspoon of oregano

- Spiral vegetable slicer or vegetable peeler
- Bowl
- Spoons
- Row lemons or grater
Preparation
- Wash the courgettes and remove the ends. Cut the courgettes into sticks using the special tool to make vegetable spaghetti.

Those who do not own the spiral vegetable slicer can use a simple vegetable peeler to obtain thin slices of courgette. The slices can then be cut into sticks with a knife.- Combine the courgette spaghetti in a bowl. Flavor with the zest of an organic lemon and half of its juice. Then grate a piece of fresh ginger and add it to the zucchini. Add the chia seeds and season with 2 tablespoons of oil, salt, pepper and chopped parsley.
- Leave to macerate for at least 15 minutes.
- Meanwhile, prepare the dressing. Wash the tomatoes, remove the stalk and cut the pulp into cubes. Season with a tablespoon of oil, salt, pepper and oregano.
- Shell the pomegranate seeds and set aside.
- Chop the walnuts with a knife.
- Compose the dish. Arrange the courgette spaghetti neatly on a plate. In the center, season with a couple of tablespoons of diced tomato and chopped walnuts. Embellish with some pomegranate seeds.
