Autumn is the mushroom season: so, since we are in the middle of November, I decided to cook for you one of the most classic side dishes in which the mushroom is the protagonist.
Just chop some parsley, season with salt and pepper, and flavor with garlic to obtain an ideal sauce for the mushrooms. Let's prepare them together!

Ingrediants
- 750 g of champignon or chiodini or pioppini mushrooms
- Plenty of parsley
- q.s. of salt
- q.s. of pepper
- 2 tablespoons (20 ml) of extra virgin olive oil
- 1 clove of garlic
Materials Needed
- Chopping board
- Preferably ceramic knife
- Casserole with lid
- Wooden spoon or scoop
- Garlic toothpick (optional)
Preparation
- Clean the mushrooms (in this case we have chosen porcini, chanterelles and champignons) taking care to remove all traces of soil and impurities. Cut the mushrooms until you get fairly regular slices for even cooking.
- Heat 2 tablespoons of extra virgin olive oil and flavor with a clove of unpeeled garlic: it is advisable to skewer the garlic with a toothpick to facilitate subsequent removal.
- Now proceed with cooking the mushrooms: brown the chanterelle mushrooms in the oil over a very high flame and without a lid, taking care to stir frequently to avoid burning them. Continue cooking for 10 minutes.
The right advice
Chanterelles and pioppini mushrooms require about 10-15 minutes of cooking more than other mushrooms: for this reason it is advisable to brown this type of mushrooms first for about ten minutes and to add the others at a later time.- After the necessary time, add the other mushrooms and cook over moderate heat for another 10 minutes.
- At this point, season with salt and pepper. Chop some parsley and add it to the mushrooms. Stir and allow the cooking liquid to dry if necessary (only if necessary).
- Remove the garlic clove and serve.
