Simple: we will prepare celeriac-based vegetable steaks, flavor them and bake them in the oven. How about: do you accept the challenge?

Ingrediants
- 500 g of celeriac
- Q.b. (About 40 g) of breadcrumbs
- 1 tablespoon of mustard
- Q.b. of chilli
- Q.b. of salt
- 1 clove of garlic
- 1 tablespoon of coriander seeds
- Untreated lemon juice and zest
- 3 tablespoons of extra virgin olive oil
- 30 g of sesame seeds

Preparation
- Carefully wash the celeriac root, taking care to scrub the surface with a brush to remove impurities and traces of soil. Remove the zest with a knife. Cut the root into one centimeter thick slices.
The right advice
To facilitate the removal of the zest from the root, it is advisable to cut the celeriac in half or into slices, and to remove the peel only after cutting into slices.- Prepare the macera. In a bowl, pour the extra virgin olive oil and flavor with lemon juice and grated rind, garlic (whole or chopped), salt, chilli, coriander (seeds) and a teaspoon of mustard paste. Emulsify the solution, then wet the slices of celeriac.
- Leave the celeriac slices to macerate for at least a couple of hours, preferably overnight, taking care to cover the pan with a sheet of cling film.
- Preheat the oven to 180 ° C.
- Remove the celeriac slices from the maceration and roll them in the breadcrumbs mixed with the sesame seeds.
- Arrange the celeriac slices on a baking sheet lined with parchment paper and bake at 180 ° C for about 20 minutes or until golden brown.
- Remove the celeriac from the oven and serve with soy mayonnaise as desired.
The cheese version
Those who do not follow a "vegan diet can mix parmesan cheese with breadcrumbs and serve with a sauce based on Greek yogurt and mustard or with yogurt mayonnaise."
