Today's menu in fact includes a "habitué" dish from the East: chicken in sweet and sour sauce. Here, but I would like to make some changes, as always (I love to personalize my dishes!). Normally, chicken in sweet and sour sauce is prepared with the "pairing" pineapple and peppers "; I would like to replace the pineapple with melon. I tried this combination almost by chance and I must say I was delighted. And now I'm here to propose it to you.

Ingrediants
For the chicken with melon and peppers
- half a glass of brandy
- 1 pinch of salt
- About 400 g of chicken breast
- About 200 g of peppers
- 2 tablespoons of extra virgin olive oil
- 300 g of melon pulp
- About 30 g of potato starch or cornstarch
For the sweet and sour sauce
- 50 g of sugar
- 3 tablespoons of soy sauce
- q.s. of pepper
- 150 g of tomato puree
- Optional: 1 teaspoon of sweet paprika
- 7 g (1 teaspoon) of potato starch
- 1 teaspoon of tomato paste
- 100 ml of water
- 60 ml of vinegar
- 1 pinch of salt

Preparation
- Cut the chicken breast into fairly regular bites.
- Wash the pepper, remove the inedible parts, the internal filaments and the seeds. Obtain small pieces.
- Clean the melon: cut out some balls with the digger and put them in a small bowl. Cut the remaining melon pulp into small pieces and brown it in a pan with the peppers. Season with salt and add a drizzle of oil.
- Salt the chicken and roll it in potato starch or rice flour. Heat 2 tablespoons of oil in another pan and brown the chicken nuggets; deglaze with the brandy and add the melon and pepper mix. Continue cooking for about ten minutes, covering with the lid and maintaining a gentle flame.

To prepare sweet and sour sauce at home
pour 70 ml of water into a saucepan and add 50 g of sugar and a pinch of salt. When it starts to boil, add 60 ml of white vinegar, 150 g of tomato puree, 1 teaspoon of tomato paste, a pinch of sweet paprika (optional) and 3 tablespoons of soy sauce (or balsamic vinegar glaze. ) Dissolve 7 g (1 heaped teaspoon) of potato starch in about 30 ml of water and add it to the sauce to thicken it.- If you wish, you can mix a part of the sweet and sour sauce directly with the chicken in the pan. Alternatively, serve the sweet and sour sauce on the side. Decorate with a few melon balls and serve.
