To prepare the crispy baked potatoes we will use 3 important tricks:

- Potato cooling after pre-cooking in water: the oil will only be added when the potatoes have cooled down. This way, the potatoes require less oil.
- Lightly dusted with corn flour before cooking the potatoes in the oven: the corn flour favors the golden crust.
- Peel the potatoes after washing them in fresh water and drying them.
- Obtain small pieces of potatoes, taking care to keep the same size (it is important to make small pieces of potatoes of equal size for uniform cooking).
- Pour the potato pieces into a saucepan and fill with cold water. Bring to a boil and calculate only 3 minutes from boiling.
- Drain the potatoes and season with salt. Allow the potatoes to cool to room temperature.
