Ingrediants
For the Cordon Bleu
- 600 g of chicken breast
- 100 g of cooked ham
- 100 g of Fontina cheese
- Q.b. of salt
For the breading
- 60 g (1 medium) of eggs
- 100 ml of milk
- 2-3 tablespoons of extra virgin olive oil
- Q.b. of salt
- About 30 g of breadcrumbs
Materials Needed
- Chopping board
- Pan with lid
- Bowls of various sizes
- Round stencil
- Toothpick sticks
Preparation
- With a meat mallet, flatten the chicken breast to make three large and rather thin steaks.
- Salt the steaks on both sides.
- Cut the stretched curd cheese (eg Fontina) into slices and, with a round mold, make three discs.
- Cut the cooked ham with the same mold used for the cheese, and obtain three discs.
- Open the steaks and place a slice of ham and a slice of cheese on one half. Fold the slice of meat in half and seal with a stick.

There are two other ways to prepare cordon bleu.
In the first case, it is possible to cut a chicken breast steak in order to create a pocket, then stuff it with ham and cheese. The second method consists in making a cordon bleu by overlapping two slices of chicken and then filling with ham and cheese: in this case, however, to seal the two steaks, you will have to use appetizers or sew with a kitchen cord.- In a saucer, shell an egg and quickly emulsify with a drop of milk: the milk is used to avoid using too many eggs, thus making the breading lighter. Salt to taste.
- Dip the three cordon bleu in the egg and milk solution, then roll them in the breadcrumbs. Repeat this step twice.
- Pour in three tablespoons of extra virgin olive oil in a hot pan and brown the cordon bleu, maintaining a moderate flame. When browning is complete, lower the heat, cover with the lid and cook slowly for 10 minutes.

Some recipes involve immersing the cordon bleu in hot oil: in this version, we recommend using only three tablespoons of oil. If the liquid gets too dry, add a few tablespoons of water during cooking.- Serve the corbon bleu very hot, together with a fresh salad.

A complete second dish that is sadness proof! Here, the "ideal would be to accompany everything with a" fresh salad do not put the fries this time! I would say that the cordon bleu are sufficient! And then a good run and some fitness exercises to work it all off!
And for those who want the lighter version, I recommend the cordon bleu baked and without eggs!

The Classic Cordon Bleu are a dish of animal origin (not suitable for vegetarian and vegan diets), with a medium caloric intake. Energy is provided above all by proteins (with a high biological value) and lipids, while sugars and fibers play a marginal role. Cholesterol is significant and fatty acids appear mainly unsaturated.
