For 5 soy steaks:
- 250 g of boiled soy or 130 g of dried yellow soy beans
- 250 g of tofu
- Q.b. of salt
- Q.b. of pepper
- Q.b. of sweet paprika
- 2 tablespoons of extra virgin olive oil
- About 50 g of breadcrumbs
- If needed: 1 tablespoon of soy milk

- 2 tablespoons of extra virgin olive oil

Preparation
- Soak the dry (non-GMO) soybeans overnight, changing the water a couple of times.
- Drain the softened legumes, rinse to remove the phytates and other anti-nutritional substances, then cook the soy in plenty of unsalted water for about 90 minutes, or until the seeds are soft. Alternatively, cook the soy in the pressure cooker for 40 minutes.
- Drain the soy and combine it in a glass of a blender.
- Cut the tofu into pieces and add it to the soy. Season with sweet paprika, season with salt and pepper. Combine a couple of tablespoons of oil and vegetable milk (eg soy milk). Blend until you get a soft dough. If necessary, adjust the consistency by adding one or two teaspoons of breadcrumbs. Taste the mixture and, if necessary, season with salt and pepper.

As an alternative to the blender, you can puree the soy with the tofu using a simple vegetable mill.
It is possible to flavor the dough with other spices, such as: hot pepper, curry, turmeric, fennel or other.- Preheat the oven to 180 ° C.
- Prepare a dish with breadcrumbs (breading).
- Take a spoonful of dough and roll it on the breadcrumbs to form a meatball. Crush the meatball in your hands to obtain the shape of a steak.
- Continue in this way forming 4 more soy steaks.
- Place the vegetable steaks on a plate lined with parchment paper. Pour a drop of oil over each soy steak, then cook at 180 ° C for 15-20 minutes, until golden brown.
- Remove from the oven, wait 5 minutes before serving to allow the dough to harden slightly.
- Serve the soy steaks with mixed salad.

They can be made in many other ways, using for example soy and potatoes (instead of tofu), or soy and soaked wholemeal bread, and you can cook them in a pan or in the oven.
