Short review: how to clean artichokes?
To clean the artichokes, remove the outer leaves (bracts), and cut the hardest part of the stem. Then remove the thorns and the upper part of the artichoke. With a digger or a sharp knife, remove the central beard (pappus). As they are cut into slices, the artichokes are dipped in acidulated water to avoid oxidation.- Clean the broccoli and cut the inflorescences to obtain similarly sized tufts.
- Peel the potatoes and cut them into cubes.
- Clean the celery and remove the outermost filaments. Cut the celery into cubes.
- Combine the vegetables in a saucepan, season with salt and pepper, then add the fennel seeds.
- Cover flush with plain water, then bring to a boil. Cover with the lid, lower the heat and cook gently for about 40 minutes.
The choice of vegetables
In this soup we have chosen specific vegetables, with purifying and detoxifying properties. The artichoke ranks in the first places among the hepatoprotective, antioxidant and purifying vegetables: to enhance its action, it is advisable to infuse the "waste" leaves to drink the infusion or macerate (the active ingredients are concentrated in the leaves ).
Broccoli, a source of fiber, has purifying properties and is a highly satiating food, rich in mineral salts such as iron and phosphorus. The ideal is to combine broccoli with lemon juice to increase the bioavailability of iron.
Celery corrects the flavor of vegetables, at the same time exerting purifying properties.- After the necessary time, blend the vegetables to obtain a cream. Serve with a grated lemon zest and, to taste, with some croutons.
