Ingrediants
- 160 g of pasta
- 2 tablespoons of extra virgin olive oil
- 50 g (about 10, clean) of courgette flowers
- 50 g of spreadable cheese
- 50 ml of milk
- 1 tablespoon of pink pepper
- A few basil leaves
- 20 g of grated Parmesan cheese
- q.s. of salt
Materials Needed
- Pasta casserole
- Cooking pan
- Grater
- Knife
- Dishcloth
- Colander
Preparation
- Fill a saucepan with plenty of water and bring to a boil. Salt lightly and dip the pasta.
- Cook the pasta for the time indicated on the package.
- Meanwhile, peel the courgette flowers. Remove the pistil and gently open them with your hands. Dab them with a damp cloth or wash them under a very light jet of water to avoid damaging them. Dry them with absorbent paper and cut them into strips with a ceramic knife.
- Pour a drop of oil into a pan and, when hot, brown the strips of courgette flowers maintaining a high flame, stirring often. Add salt to taste. Cook for a couple of minutes.
- Drain the pasta al dente with a slotted spoon and add it to the sauce. Finish cooking the pasta in the same pan by adding a drop of milk.
- Season the pasta with freshly grated parmesan, a tablespoon of pink peppercorns and some basil leaves. Turn off the heat and add some sprigs of spreadable cheese. Cover the pan with the lid and let it rest for a couple of minutes, to give the cheese enough time to melt.
Did you know that
To make the pasta richer, you can add one or two courgettes cut into julienne strips, to then add to the courgette flowers! And for an even tastier pasta, we can replace the spreadable cheese with grated provola!- Serve the pasta very hot.
