- 120 g of pre-cooked couscous
- 150 g of water
- 150 g of zucchini
- 150 g of cherry tomatoes
- 30 g of sultanas
- 1 pinch of salt
- Q.b. of pepper
- 1 teaspoon of garlic
- 1 sprig of parsley
- 1 teaspoon of curry
- 1 teaspoon of mustard
- 2 tablespoons of extra virgin olive oil

Preparation
- To prepare the couscous rabbit, start with the sauce. Wash the courgettes, trim them and cut them into small cubes. Wash the cherry tomatoes and cut them into pieces. Soften the raisins by covering them with warm water.
- Pour the vegetables into a pan, add a drizzle of oil, salt, garlic powder and pepper: cook over medium heat for about ten minutes. Drain the raisins from the soaking water and add them to the vegetables. Finish with parsley .

- Meanwhile, place the pre-cooked couscous in a bowl, add a teaspoon of curry and add a drizzle of oil. Pour the water into a saucepan, add a pinch of salt and bring to the boil. When it boils, pour the water into the couscous, mix quickly, cover with cling film and let it rest for 5 minutes so that the couscous hydrates.
- The couscous is ready when it has absorbed all the water: shell it with a fork and mix it with the vegetables, seasoning with a teaspoon of mustard sauce.
- Transfer the couscous to the vegetables in an Easter bunny-shaped mold: press with a fork and leave to rest for 5 minutes.
- Turn the couscous bunny over into a serving dish. Decorate with some salad leaves or cherry tomatoes.
