- 220 g of chicken breast
- 150 g of coarse salt
- 1 sprig of rosemary
- 40 g of green beans
- 1 bay leaf
- 70 g of potatoes
- 50 g of carrots
- 40 g of shallots
- 150 g of coppery tomatoes
- 50 g of celery
- 100 g of zucchini
- 2 tablespoons of extra virgin olive oil

Preparation
- Clean the vegetables. Wash the courgettes, remove the ends and cut them into pieces. Wash the celery and remove any woody filaments. Peel the potatoes, carrots and shallots, then cut the pulp into cubes. Blanch the tomato in water, cut it crosswise on the opposite side of the stalk and remove the peel. Clean the green beans and remove the ends.
- Gather all the peeled and chopped vegetables in a blender container. Chop everything until you get a cream. Halfway through blending, add the minced chicken, rosemary and bay leaf. Blend again.
The right idea
You can customize the flavor of the meat cube according to your tastes, adding or replacing the vegetable with other vegetables (e.g. pumpkin, onion, cabbage, etc.). Chicken meat can also be replaced with another mince of mixed meat (eg pork, turkey).- Heat a large saucepan, add 2 tablespoons of extra virgin olive oil and add the meat and vegetable cream. Bring to a boil and, after a few minutes, add the coarse salt. Cook everything slowly, over low heat, for 90 minutes, until the mixture is very dry and compact.
Important information for cooking
It is recommended to mix the vegetable and meat cream often to avoid burning it.
The mixture is ready when it begins to peel off the walls.- If necessary, blend the cream further with the help of an immersion mixer.
- After the necessary time, transfer the mixture into a baking tray lined with baking paper, taking care to form a rectangle with a thickness of 1.5 cm.
- Put everything in the oven at 160 ° C and cook for one hour.
- After one hour of cooking, remove the plate from the oven and cut the rectangle into cubes measuring approximately 3 X 3 cm.
- Bake again, lower the oven temperature to 60 ° and let the nuts dry for 50 minutes.
- Allow to cool completely and store the nuts in a jar or tin box. They will keep perfect for 3 months.
