Today I propose a recipe from the Web, which was recommended to me by Sara de Marco: a fluid dough to obtain very fast wraps, without lard, which are prepared in a flash, without necessarily having to get your hands dirty. The recipe is formidable, a cross between traditional wraps and crepes. These Pseudo-Piadine are typical of the Modena area and are called Borlenghi!

Ingrediants
Ingredients for 4-5 borlenghi
- 150 g of white flour of type 00
- 230 ml of water
- 3 tablespoons of extra virgin olive oil
- 4 g of salt
For the filling
- 200 g of coppery tomatoes
- 200 g of mozzarella
- 50 g of rocket

Preparation
- In a bowl, sift the white flour, add the salt and mix with extra virgin olive oil and water: you will get a rather liquid batter.

Those who wish can enrich the dough with sesame seeds and chia seeds!- Leave to rest for 5 minutes. Meanwhile, prepare the filling: wash the tomatoes and cut them into slices. Rinse the rocket and dry it with the help of the centrifuge. Cut the mozzarella into slices.
- Proceed with shaping the wraps. Heat a pan very much, then pour the batter trying to form a thin layer of dough. Cook the piada maintaining a moderate flame. When the crust has formed, turn the piadina and cook it on the other side for another 2-3 minutes. Remove the piada and place it on a plate.
- Do this until you run out of batter.
- Stuff the borlenghi with tomato, mozzarella and rocket, fold them into a crescent and serve immediately.
