I have always liked to create innovative recipes that recall, in shape, texture and flavor, a certain food even if - actually - the raw materials are totally different from the originals. Ingrediants
- 150 g of almonds
- 1 teaspoon (5 g) of brewer's yeast flakes
- 1 tablespoon of untreated lemon juice
- 20 ml (2 tablespoons) of coconut oil
- Optional: 2 tablespoons (20 ml) of hemp seed milk
- Q.b. of salt

Preparation
- First, soak the almonds overnight: in this way, they will soften, therefore the subsequent blending will be easier.
- After 8 hours, drain the almonds from the soaking water and combine them in the container of a blender.
- Add a couple of tablespoons of hemp seed milk, coconut (or seed) oil, lemon juice, a pinch of salt and flakes of brewer's yeast.
What is brewer's yeast used for?
Brewer's yeast flakes are used as a flavor enhancer for vegetable soups and cheeses. THE Saccharomyces cerevisiae present, in fact, give a particular aroma that recalls that of animal parmesan cheese.- Blend everything until you get a soft consistency. If the cream is too dry, add one or two tablespoons of hemp milk or plain water.
- Pour the raw veg-cheese into a mold (or into a silicone or ceramic mold), leveling and pressing the surface.
- Turn the veg-cheese out onto a plate and serve as desired.
How to consume raw cheese?
Raw almond ricotta is excellent to be cut into slices and eaten together with a salad. It can also be used to flavor soups or as an alternative second course.
