Preparation

The right alternatives
As an alternative to dry brewer's yeast, you can use 6 g of fresh brewer's yeast or 75 g of home-made mother yeast.
It is also possible to mix Manitoba flour with 1/3 wholemeal flour or with other flours. White sugar can also be replaced with brown sugar.- Make a ball and let it rest in a warm environment for a couple of hours or until the dough is swollen, voluminous and soft.
- Take the dough and open it gently on the work surface. Roll out the dough until you get one or more long and narrow strips: the width of each strip should be approximately 10 cm.
- Fill each strip with a jam of your choice (eg strawberry jam). Wrap the strips starting from the long side, to obtain marmalade-filled cords. Seal the sides by pinching the dough with your fingers to avoid spilling the filling.
- At this point, arrange the stuffed cord along the sides of a star-shaped mold and, in the center, make a small rose by rolling 15-20 cm of cord.
- Let the brioches rise in a warm environment (eg a warm oven) until it doubles in volume.
- Preheat the oven to 180 ° C (static). Brush the star with a little melted butter and sprinkle the surface with granulated sugar. Bake at 180 ° C for 20-25 minutes.
- Remove from the oven, allow to cool and serve.
