Pears and chocolate: a timeless combination, able to make each recipe unique and special. But what happens when we add a pinch of red pepper? We will prepare together some pears flavored with cinnamon with a pour of chocolate with a spicy surprise.

Ingrediants
- 3 tablespoons of vegetable cream or 10 g of cocoa butter
- 1 piece of cinnamon
- 120 g of dark chocolate
- grated rind of untreated lemon
- 30 g of almond fillets
- 1 pinch of red pepper
- 600 g (3 medium) of pears
Materials Needed
- Casserole
- Bowl or pots for the double boiler
- Lemon grater
- Teaspoons
- Spatula (optional)
- Vegetable peeler or knife
Preparation
- Fill a saucepan with water and bring to a boil. Add the cinnamon and grated lemon zest.
- Carefully wash the pears and remove the peel with the vegetable peeler, leaving however the stalk.
- Blanch the peeled pears in flavored water for 5 minutes: this step is important to soften the pears and to flavor them.
Pay attention to cooking
If the pears are very ripe, it is recommended to blanch them only for a couple of minutes. Conversely, if the pears are very firm and unripe, continue cooking for another 5 minutes.- Chop the dark chocolate and melt it in a double boiler (or in the microwave) together with a pinch of chilli and cocoa butter (or vegetable cream).
- Remove the pears from the cooking water, dry them gently and dip them in the melted chilli chocolate.
- Arrange the pears on a plate and sprinkle with sliced almonds.
- Allow the chocolate covered pears to cool completely and serve.

If many are expecting the classic pears with chocolate, few imagine they will find a curious spicy surprise. I have not abounded with chilli because I would like to keep pears and chocolate as main ingredients: the chilli must remain pleasantly on the tongue and pinch it a little after the first bite.
