Preparation
- Prepare the shortcrust pastry of crumbs. In a bowl, sift the white flour and wheat starch with the baking powder. Add the vanilla, a pinch of fine salt and the brown sugar.
- Add the egg and the very soft butter (at room temperature). Knead with your hands until you get a mixture of crumbs, possibly adding a spoonful of milk.

Coarsely chop the dark chocolate with the knife. Mix the cream cheese with the ricotta. Add the sugar and mix everything with the pieces of dark chocolate.
- Line a springform pan with parchment paper.
- Pour a little more than half of the dough on the base of the pan, trying to exert light pressure with your hands, in order to flatten the dough and create an even layer. Leave a thicker portion of dough along the edges.
- Pour the cream cheese into the center of the base and cover with the crumbs of the remaining dough, trying to cover the entire surface.
- Bake the tart at 180 ° C and bake for about 40 minutes.
- Remove the pan from the oven, allow to cool and remove from the mold.
- Serve the cake warm or cold.
