- 70 g of sugar
- 30 ml of milk
- 50 g of butter
- Half a teaspoon (3 g) of baking powder
- Grated zest and 20 ml untreated lemon juice
- 60 g (1 medium) of eggs
- 75 g of rice flour
To decorate (optional)
- A few drops of red dye
- A few drops of yellow dye
- A few drops of blue dye
- 1-2 tablespoons of water
- 50 g of powdered sugar
- 1 tablespoon of silver beads

Preparation
- Sift the white 00 flour and the rice flour into a bowl, together with the baking powder. Then add the sugar and salt. Grate the zest of an organic lemon and mix it with the powders.
- Shell the egg and add it to the flour.
- Cut the lemon and squeeze half of it (about 20 ml): add the lemon juice to the flour mix.
- Gently melt the butter in the microwave and add it to the other ingredients. Mix well, adding as much milk as needed (about 30 ml) to obtain a smooth, homogeneous, soft and non-sticky paste.
Alternative to butter
The same amount of seed oil can be used instead of butter.- Wrap the pasta in a sheet of cling film and let it rest for an hour.
- Preheat the oven to 180 ° C.
- Roll out the dough with a rolling pin to a thickness of about half a centimeter.
- Therefore, obtain 30-35 biscuits with an Easter mold: here we used a dove mold, but you can also use bell, duck, rabbit or other molds. The scraps of dough can clearly be kneaded again and get other biscuits.
- Arrange the doves on the baking paper, keeping a certain distance between them.
- Bake in a hot oven, preheated to 180 ° C, for about 12-15 minutes (or until golden brown).
- Remove the cookies from the oven and allow to cool.
- Prepare the water-based icing by mixing the icing sugar with one or two tablespoons of water. You can dye the icing red, blue and yellow with the specific dyes, in gel or powder. Pour the colored or white icing into a bag. à poche or in a parchment paper croissant and decorate the cookies as desired, enriching them with some edible beads.
