At the suggestion of a colleague of mine (originally from Chioggia), I propose a typical Easter recipe of his land: the Papini, special hard, crunchy donuts, sweet - but not too much - and perfect for munching. I must admit that, when I tasted them, I did not know their flavor, but I guarantee you that they are very good and particular! Prepare them with me.

Ingrediants
For 12-15 large cookies
- 250 g of white flour of type 00
- 90 g of sugar
- 25 g of butter
- 60 g (1 medium) of eggs
- 20 g (1 medium) of egg yolks
- 1 sachet of vanilla
- If necessary: 1-2 tablespoons of milk
- 1 pinch of salt

- Casserole
- Baking paper
- Skimmer
- Razor blade or knife
Preparation
- Prepare the pasta by mixing, first of all, the white flour, a pinch of salt and sugar. Flavor with a vanillin sachet or with the seeds extracted from the vanilla pod.
- Gently melt the butter, in the microwave or in a saucepan.
- Shell the eggs. In the center of the flour, combine a whole egg and a yolk, mixing everything with the melted butter. Knead the mixture adding, if necessary, a tablespoon of milk.
- The consistency of the shortcrust pastry must be obtained.
- Wrap the pastry in a sheet of cling film and let it rest for 15-20 minutes.
- Take the dough and obtain some cords with a diameter of about 1-1.5 cm. With a knife, cut the cords to obtain pieces of 15-18 cm long.
- Wrap each string sealing the ends, to obtain a donut.
- Arrange the donuts on a plane.
- Meanwhile, bring the water to a boil.
- Dip the donuts into the water, a little at a time, and cook them for 2-3 minutes: when they emerge, take the papini out of the water and let them dry on a cloth or on a sheet of baking paper.
- Let the dads dry for 24 hours.
- The following day, carve the daddies along their entire length with the help of a blade or a thin-bladed knife.

Papini are foods that belong to the group of sweets.
They have a high energy intake, mainly provided by carbohydrates, followed by lipids and finally by proteins.
The sugars are mainly complex, the fatty acids above all saturated and the peptides of medium-high biological value.
Cholesterol is high, as are fiber.
The food does not lend itself to the diet against overweight and certain metabolic diseases, such as: type 2 diabetes mellitus or hyperglycemia, hypertriglyceridemia and hypercholesterolemia.
It is contraindicated in the diet against celiac disease and lactose intolerance. It is allowed in the vegetarian diet but not in the vegan one. The average portion corresponds to about 30g (100kcal).
