How nice to create an "atmosphere of enchantment and magic" at Christmas: the houses are filled with sparkling decorations and the air smells of party! Even the tables rejoice and, with the numerous Christmas dishes they welcome, they seem to celebrate Christmas. in order not to miss one of the characteristic symbols of this festival, I thought of bringing to the table a sweet star, a Bavarian with raspberries covered in chocolate.

Ingrediants
For the Bavarian
- 60 g (1 medium) of eggs
- 100 g of fresh cream
- 2 sheets (4 g) of isinglass
- 100 g of raspberries
- 50 g of sugar
- 250 ml of milk
- 20 g (1 medium) of egg yolks
To decorate
- 25 g of raspberries
- 70 g of dark chocolate
- Q.b. of powdered sugar

Preparation

Bavarian cream is a kind of custard which is thickened with isinglass and, often times, enriched with whipped cream.- Soak the gelatin sheets in cold water.
- Pour the milk into a saucepan and add the sugar, raspberries, a whole egg and a yolk. Blend everything with the immersion blender.
- Prepare a bowl of water and ice.
- Bring the saucepan over the heat and melt the softened gelatine sheets in it, continuing to stir. Bring the mixture to 82-84 ° C.
Beware of cooking!
Since there is no starch, the cream tends to go crazy because the yolk proteins tend to coagulate with heat. For this reason, it is important not to exceed 84 ° C.- Once the correct temperature has been reached, remove the saucepan from the heat and filter the mixture to remove the seeds of the raspberries (optional), pouring the cream into a bowl placed inside a container of water and ice. Stir with a whisk for a few minutes for the cream to cool down.
- Once cold, remove the bowl from the water and ice, and gently add the whipped cream.
- Transfer the mixture into a star-shaped mold and place everything in the refrigerator for at least two hours. To speed up the time, let the Bavarian cream cool in the freezer.
- When the Bavarian is firm, gently turn it over. For easy removal, it is recommended to pass a narrow blade knife along the edges and quickly immerse the mold in boiling water.
- Melt the chocolate in the microwave or in a double boiler. Spread the chocolate on a sheet of baking paper and leave in the fridge for a few moments to harden. Scrape the chocolate strip with a knife to form curls. Decorate the Bavarian with some chocolate curls, some raspberries and a sprinkling of icing sugar.
