- 100 g of frumina

Preparation
- In a bowl, mix the white flour, wheat starch and baking powder. Flavor with lemon zest, then add the strawberry syrup. Stir the mixture until you get a thick cream.
- At this point, pour the egg whites into a very large bowl and add a pinch of salt. Beat the egg whites for a couple of minutes, until partially whipped. Always stirring, add the cream of tartar (or the chemical yeast) and the juice of half a lemon.

To facilitate whipping, the egg whites should be at room temperature. If not, they can be gently heated in the microwave, up to 20-25 ° C.
In this case we used pasteurized egg whites. It is however possible to use egg whites from fresh eggs: the yolks can be used for the preparation of custard or eggnog.- Preheat the oven to 160 ° C, in the "ventilated" function.
- At this point, slowly combine - and a few at a time - the whipped egg whites with the strawberry cream, taking care to mix with a spatula or a wooden spoon (not with whips!).
- Pour the mixture (which must be very soft and fluffy) into the specific mold for American donut.
Important tips
It is recommended not to grease or flour the mold.
Do not beat the mold on the surface to level the dough! It will be sufficient to caress the surface with a spatula to avoid letting the egg whites go limp.- Bake the cake at 160 ° C and bake for 45-50 minutes.
- Remove the mold from the oven and immediately turn it over onto a surface: the special feet of the mold will allow the air to circulate in the cake, at the same time preventing it from sliding on the surface. The peculiarity of letting the donut cool "upside down" prevents the cake from collapsing.
- Serve the strawberry Angel Cake with a sprinkling of icing sugar. Garnish with strawberries and serve.
