Ingrediants
For 20-25 croquettes
- Steamed food: 400 g of spinach
- 60 g (1 medium) of eggs
- 50 g of grated Parmesan cheese
- Cooked food: 150 g of potatoes
- Q.b. of salt
- Q.b. of pepper
- 70-100 g of stringy cheese or mozzarella
To cover and to cook
- 80 g of corn flakes
- 3 tablespoons of extra virgin olive oil

Preparation
- Wash the potatoes, peel them, cut them into cubes and cook them in boiling water until soft (10-15 minutes, depending on the size of the pieces).
- Wash the spinach, spin them to dry and steam them until wilted (about 5 minutes).Remove the spinach, allow to cool, squeeze and chop coarsely with a knife.
The right advice
In this recipe we will use about 150 g of boiled potatoes: the quantity is modest, therefore it is advisable to cook a higher dose if necessary, but to use only 150 g (cooked weight) for this recipe. Leftover potatoes can be used to prepare other recipes, such as baked potatoes or mashed potatoes.
Those who do not want to use potatoes may prefer potato flakes, which are much more practical.
It is also advisable to chop the spinach with a knife, and not to blend them to avoid forming a cream.- Mash the potatoes to make a puree.
- Collect the chopped spinach in a bowl, season with salt and pepper. Season with the grated parmesan and mix with an egg and the mashed potatoes.
- Wait about ten minutes for the mixture to harden.
- At this point, proceed with shaping the croquettes. Take a spoonful of spinach cream, add a piece of spun curd cheese in the center (eg Asiago, Fontina, Mozzarella etc.) and shape with your hands until you get a cylindrical and elongated shape.
- Roll each croquette in chopped corn flakes.
- Place the croquettes on a plate lined with baking paper. Sprinkle the spinach croquettes with a drizzle of oil, then bake in the oven at 200 ° C (ventilated) for about 20 minutes or until golden brown. It is advisable to turn the croquettes halfway through cooking to obtain an even crunch.
- Serve the spinach croquettes very hot.
