- 50 g of cornstarch
- 75 g of powdered sugar
- 3 g of baking powder
- 1 pinch of salt

- In a bowl, sift the white flour along with the corn starch and powdered sugar. Add a pinch of salt, baking powder, grated lemon zest, then add the wet ingredients (corn oil, egg and milk). Knead with your hands until the dough is extremely smooth and velvety, soft and free of lumps.

Normally, a high-fat (butter) whipped shortcrust pastry is prepared to obtain cookies with the cookie cutter. In this version, we propose to replace the butter with a part of oil and the result will still be an extremely crumbly and pleasant dough.- Load the cookie cutter by introducing a part of the dough into the body of the instrument, then close with a mold of your choice and seal the end with the special ring. Vacuum the cookie cutter magazine to eliminate air. At this point, place the cookie cutter on a smooth surface without baking paper and not greasy (e.g. oven plate, metal top or marble top), lower the lever to push the dough out, then gently remove the instrument from the top: the biscuit will remain attached to the top, but just pass a spatula to place it on the baking tray.

The same dough can be used for making biscuits with simple molds: in that case, we recommend increasing the consistency of the dough by using an extra couple of tablespoons of flour, to make it easier to roll out and work with your hands.- When the dough runs out in the cookie syringe, load the tool again with another portion of dough.
- Place the biscuits on a plate lined with baking paper. If you like, decorate half of the cookies with a candied cherry.
- Bake in the oven at 160 ° C (mode: ventilated) for 15 minutes: the biscuits must appear light and must not darken too much.
- Remove from the oven and allow to cool completely. Once cold, remove the cookies from the plate. If you like, you can decorate the biscuits without candied cherries with melted chocolate.
- Shortbread biscuits with oil can also be kept for a month, in a tin box.

That of Crumbly Biscuits is a recipe that belongs to the group of dry pastry desserts.
It is a very caloric food, whose energy is mainly supplied by carbohydrates, followed by lipids and finally by proteins.
Carbohydrates are mainly complex, unsaturated fatty acids and peptides of medium and high biological value. Fiber and cholesterol are present in good quantities.
There are no foods that contain histamine; the istamino-liberators are chocolate and egg white.
The crumbly biscuits contain gluten and a small concentration of lactose.
