Properties of Violet-Blue Vegetables
Violet / blue vegetables and fruits are important for health, as they reduce the risk of cardiovascular diseases and tumors; these foods also contain substances that are important for urinary function, sight and the structure of blood capillaries. Plus, all purple fruits and vegetables are high in fiber.
Anthocyanins, which have a high antioxidant power, prevent atherosclerosis caused by high blood cholesterol levels, urinary tract infections (especially berries), improve visual function, inhibit platelet aggregation, increase resistance capillary (especially berries) and are therefore useful against blood circulation pathologies.
Carotenoids, on the other hand, prevent many types of cancer, cataracts, skin aging, neurodegenerative diseases and cardiovascular diseases.
