The Wellington fillet has as its main ingredient the fillet of beef, a worthy exponent of the 1st fundamental group of foods - foods rich in proteins with high biological value, mineral salts and specific vitamins. However, the respective nutritional properties are compromised by the presence of the other components of the recipe, in particular the puff pastry. This is why the nutritional translation can be observed: the presence of complex carbohydrates, dietary fiber and a greater concentration of saturated fat and cholesterol.
The Wellington fillet lends itself only occasionally to the ordinary diet of healthy subjects. However, it has contraindications for those suffering from certain metabolic diseases, especially genetic-hereditary - such as hyperuricemia and phenylketonuria - and for those who must control overweight and / or other acquired metabolic diseases - such as hypercholesterolemia.
The Wellington fillet recipe is complex; it requires a deep knowledge of cooking systems and the oven, as well as some specific experience.
