What is soy allergy?

Soy allergy is one of the most common food allergies. It is an adverse, immune-mediated reaction that occurs after the dietary intake of the seeds or derivatives of Glycine max (Fabaceae family); as we will see, the severity of symptoms varies.

Note: Highly refined soybean oil is exempt from labeling the presence of allergens. This is because it does not contain traces of proteins, which are the agents responsible for immune reactions to soy.
