- 500 g of zucchini
- 2 tablespoons of extra virgin olive oil
- 1 pinch of salt
- Q.b. of pepper
- 1 clove of garlic
- 1 sprig of parsley
Materials Needed

Preparation
- Wash the courgettes, trim them and, with the help of a mandolin, cut them into thin slices.
- Pour two tablespoons of extra virgin olive oil into a large saucepan and season with a clove of garlic, whole or chopped according to personal tastes.
- When the oil is hot, add the courgettes and keep a high flame for a couple of minutes to make them flavor better and to create a crunchy crust.
- At this point, add a ladle of water, lower the heat, cover with the lid and cook for 8-10 minutes.
- At the end, season with salt and pepper, and flavor with plenty of fresh parsley.
Some advice
For best results, use a large pan and avoid overlapping too many layers of courgettes: by doing so, they will cook at their best without pulping.
Add the salt only at the end: as we know, the salt tends to remove the vegetation water from the vegetables, so it is a good idea to add it only at the end to prevent the pulp from becoming soggy.
