Review: how to prepare the orecchiette?
To prepare 300 g of orecchiette, mix 200 g of re-milled durum wheat semolina with 120 ml of water. Then let the mixture rest in a sheet of cling film for 15 minutes. From the ball, cut a strip of dough and obtain a cord. Cut the cord into 1 cm pieces. With a rounded tip knife equipped with a saw, drag the ball towards you, on the pastry board, so that the dough takes on a curved shape. Place the piece of dough on the tip of a finger and turn it backwards: you will obtain a "round, concave orecchietta, with a thinner center of the edge and with rough outside. The first orecchietta is ready. Proceed in this way until all the dough is used up.- Clean the broccoli and cut the flowering tops into small pieces.
- Wash the flowering tops in fresh water.
- In the meantime, bring plenty of water to a boil, salt it lightly and add the cleaned broccoli. Cook for about 15 minutes, until soft.
- A few minutes before the end of cooking, dip the fresh orecchiette with the broccoli.
- In a pan, heat 2-3 tablespoons of extra virgin olive oil and flavor with a clove of garlic and fresh chilli.
- The orecchiette are ready in a few minutes. Then drain the pasta together with the broccoli, add to the oil and leave to flavor. Raise the heat and gently brown the broccoli.
- Serve with grated parmesan.
