Some time ago, one of you asked me how to combine smoked salmon with a mix of cheeses, knowing full well that fish doesn't like cheese. So, I thought of a recipe that, I must admit, wasn't bad at all! Dedicated to everyone, but in particular to Matteo, I suggest some unusual cannelloni of carasau bread with smoked salmon, cheese and zucchini!

Ingrediants
- 150 g of carasau bread
- 100 g of smoked salmon
- 250 g of zucchini
- 100 g of spreadable cheese
- 70 g of Taleggio
- 1 tablespoon of extra virgin olive oil
- Q.b. of salt
- Q.b. of pepper
- 10 g of breadcrumbs
Materials Needed
- Pyrex tray
- Baking paper
- Cooking pan
- Chopping board
- Knife or scissors
Preparation
- Wash the courgettes, remove the stalk and cut them into strips. Sauté the courgettes in a pan, adding a drizzle of oil, salt and pepper. Cook for 5 minutes.
- In the meantime, soften the carasau bread by running it quickly under a jet of cold water. Let the carasau bread sheets rest so that they soften and take on a moldable consistency.
Attention!
It is recommended not to leave the bread sheets in water for a long time: this bread needs to be moistened quickly to prevent it from becoming too soft and sticky.- Once soft, cut the sheets of bread into regular rectangles, using a pair of scissors or a knife.
- Line a rectangular Pyrex pan with parchment paper.
- Arrange a rectangle of carasau bread on a cutting board and stuff the short side with slices of smoked salmon, cream cheese and a spoonful of courgettes. Roll the bread from the stuffed side and place in the pan. Proceed in this way until all the ingredients are used up: with these doses you get about 6-8 cannelloni.
- Finish by sprinkling the surface with tufts of Taleggio cheese, with the remaining courgettes and a spoonful of breadcrumbs (essential for gratinating).
- Bake in the oven at 200 ° C for 15-20 minutes, turning on the grill function for the last 2-3 minutes.
- Remove from the oven and serve hot.
