- Collect the hazelnuts (with the skin) in a bowl, and cover them with water. Leave them to soak overnight.

Add the maple or agave syrup (or brown sugar) and vanilla essence to taste, then cover the hazelnuts flush with the water. Begin to blend intermittently, gradually adding more water.
The right consistency
Those who want to obtain a hazelnut drink with a stronger aroma can increase the amount of hazelnuts or decrease the dose of water. However, it should be noted that a higher dose of hazelnuts leads to an increase in the density of the drink.- The hazelnut milk is ready when it has taken on a whitish color: it means that the hazelnuts have been blended correctly.
- At this point, filter the mixture to separate the solid part (improperly called "okara") from the liquid part (hazelnut milk). For proper filtering, it is advisable to pour the mixture through a colander lined with a clean cloth, which does not smell of detergent.
