Ingrediants
- 300 g of pears
- 70 ml of corn oil
- 100 ml of milk
- 1 pinch of salt
- Untreated lemon juice and zest
- 1 pinch of cinnamon
- 120 g (2 medium) of eggs
- 100 g + 20 g of brown sugar
- 50 g of cornstarch
- 100 g of white flour of type 00
- 100 g of spelled flour
- 70 g of hazelnuts
- 8 g of baking powder

Preparation
- Peel the two pears using a potato peeler or a knife. Cut a pear and small cubes and a pear into slices. Drizzle with lemon juice and set aside.

If the pears are not ripe enough, it is recommended to cook them in the microwave for 1 minute at 1000 W, adding a tablespoon of water. Very ripe pears do not require this step.- Toast the hazelnuts in a pan for 2-3 minutes, taking care to turn them often. In this way, the aroma of hazelnuts is released.
- Coarsely chop the hazelnuts.
- Mix the white flour, spelled flour, corn starch, brown sugar (100 g), a pinch of salt, grated lemon zest and cinnamon with the diced pears and chopped hazelnuts. Mix everything with the seed oil, eggs and milk. As a last ingredient, add the sifted baking powder.
Who doesn't love eggs
To “veganize” this dessert, it is possible to replace eggs with 120 g of soy yogurt and cow's milk with any type of vegetable milk.- Line a loaf pan with baking paper, then pour in the cream obtained. Decorate the surface with the previously prepared pear slices, then sprinkle with a spoonful of brown sugar.
- Place the cake in the oven and bake at 160 ° C (ventilated) for 40 minutes: before removing the plumcake from the oven, we recommend the toothpick test, to ensure the right degree of cooking.
- Remove from the oven and allow to cool to room temperature before cutting the cake into slices.
- Keep refrigerated and use within 3-4 days.
