- 25 g of rice flour

In this recipe we used homemade oat milk; however, it is possible to prepare the same banana cream using any type of milk, whether vegetable or animal.- Peel a large banana and cut it into more or less regular slices. Pour part of the oat milk into the mixer, add the banana cut into small pieces, the juice of half a lemon and whisk everything well until it forms a velvety milkshake.

Lemon juice is important to prevent the banana from oxidizing (in this way, the milkshake will remain clear and not brown). In any case, the lemon slightly alters the flavor of the cream, making it pleasantly sour: those who do not particularly like the sour taste can reduce the quantity of lemon or avoid adding it (provided that the cream is consumed immediately: in this way , the dessert will keep its nice bright color).- In a saucepan, pour the remaining milk: heat the milk, avoiding boiling in any case.
- In a small bowl, with the help of a whisk, beat two egg yolks well with the sugar.
- When the milk in the saucepan is hot, pour in the rice flour, stirring vigorously with the whisk. Then add the banana milkshake and the egg yolks with the sugar.
- Always continue to mix with the whisk until the mixture begins to thicken. It is recommended to keep a low flame to prevent the mixture from boiling: in the latter case, the eggs would cook, ruining the cream.
- Serve the banana cream on a bowl: finish the presentation with some slices of banana, a couple of dry biscuits (for gluten intolerant, possibly choose biscuits suitable for celiacs) and a sprinkling of bitter cocoa.
