Together we have prepared many: vegan coffee pudding, cocoa pudding, persimmon pudding, diabetic pudding, gluten-free dark chocolate pudding and many others. Today I thought of preparing an alternative soy pudding with you: in addition to being prepared with soy milk, we will also use soy flour, which we will need not only to enrich the pudding with flavor, but also as a thickener (or rather, as a thickener help, since we will also use a bit of agar agar). Ingrediants
For two puddings
- 200 ml of soy milk
- 10 g of soy flour
- 20 g of fructose
- 2 g of agar agar
- 1 stick or 1 vial of vanilla

Preparation
- In a saucepan pour the soy milk (preferably self-produced) and fructose: heat the mixture and add the soy flour while stirring constantly and very slowly.
- Continue to mix with the whisk: a thin layer of foam will begin to form. Once the 80 ° C has been reached, add the agar agar as well, without stopping mixing.

The agar agar solubilizes very well at high temperatures: for this reason it is necessary to add it to the mixture only after reaching 80 ° C. To avoid the formation of lumps, it is recommended to mix vigorously with a whisk.- Remove the saucepan from the heat and add the vanilla flavoring.
- Spread the mixture into two pudding molds, possibly filtering the mixture through a colander to remove excess foam.
- Allow the puddings to cool, first at room temperature, then in the fridge, so that they can set perfectly.
- Prepare the accompanying sauce: wash, dry and cut the peach into pieces. Sauté the peach with the fructose and lemon juice. Those who wish can also flavor the peach with a few drops of vanilla. Cook over low heat until the desired consistency is reached.
- To remove the pudding from the mold, simply immerse the container in boiling water for a few moments and immediately turn it over onto a serving dish.
- Serve accompanying the pudding with the peach sauce.
