From today we will begin a new chapter concerning the fascinating molecular cuisine: the so-called "Arie", or "Spume" if you prefer. As we have seen for the fake molecular caviar (Coca-Cola caviar and Strawberry Caviar), even the airs they prepare essentially for decorative purposes, to make a dish aesthetically more beautiful and fascinating! The preparation is very simple: we will only need a good immersion mixer and some lecithin! Let's start with the coffee air!

- 1 cup of 80 ml of coffee "
- 20 ml of milk
- 3 g of soy lecithin granules or powder
- 7 g (1 teaspoon) of sugar

Preparation
- Prepare the coffee with the mocha and allow to cool completely.
- Once cold, pour the coffee into the blender beaker. Combine the milk, sugar and soy lecithin.

Soy lecithin is the main ingredient for making the so-called "arias" or "foams" in molecular cuisine. Soy lecithin - available in the form of granules or powder - is a phospholipid, a molecule composed of a polar head (water-soluble) and a hydrophobic tail (not soluble in water). For this particular structure, lecithin is considered an excellent emulsifier or a substance capable of binding non-mixable substances. Among the pairs of non-mixable substances, we can find water and oil or air and water. In the preparation of the arias, the ability of lecithin to emulsify water and air is exploited.- Insert the immersion blender into the liquid and blend.
- Slowly lift the immersion mixer, tilt the beaker and mix the surface foam again.
- Extract the air obtained and let it rest for a few moments in a bowl.
- In the meantime, prepare the accompanying food. In this case, we have chosen to serve the coffee aria together with a natural white yogurt.
- Then pour the yogurt into a cup and gently arrange the coffee air.
