Ingrediants
For about 10 pancakes
- 300 g of boiled potatoes or mashed potatoes
- To cook: 1 tablespoon of extra virgin olive oil
- 20 g of grated Parmesan cheese
- 1 grated nutmeg
- Q.b. of pepper
- Q.b. of salt
- 1 teaspoon of thyme
- 20 g of cornstarch
- 65 ml of milk
- 120 g (2 medium) of eggs
For the sauce
- 125 g of yogurt
- A few stalks of chives
- 1 tablespoon of extra virgin olive oil
- Q.b. of salt
- Q.b. of pepper

- Potato masher
- Wooden spoon

Preparation
- Boil the potatoes. Wash the potatoes to remove impurities and traces of soil.
- Dip the potatoes in a saucepan filled with cold water: bring to a boil and cook for 40-50 minutes, until soft. When the potatoes are cooked, drain them from the water and mash them with a potato masher to obtain a puree.
- Shell the eggs and divide the yolks from the whites.
- Season the mashed potatoes with salt, pepper, nutmeg and thyme, then add the milk, the grated Parmesan cheese, the two egg yolks and the corn starch: mix the mixture to obtain a fairly thick cream.
- Beat the egg whites until stiff and add them by spoonfuls to the potato mixture, taking care to mix from the bottom up to avoid letting the mixture go limp.
- Heat a skillet until it becomes red-hot. Grease the plate with a drop of oil and pour the batter in spoonfuls, leveling the surface to obtain discs with a thickness of about 1 cm.
Attention!
For an impeccable result, the plate must be hot: in fact, if you cook the pancakes on a warm or cold plate, the batter will tend to stick to the bottom.- Maintain a high flame and turn the pancakes only after the crust has formed: cook each pancake for one minute on each side.
- Arrange the savory pancakes on a plate and keep warm before serving.
- Prepare a sauce by mixing plain yogurt, salt, pepper, chives and a little oil: accompany the potato pancakes with this sauce.
