Gluten Free Potato Pancakes

• Ingrediants

  For about 10 pancakes

  • 300 g of boiled potatoes or mashed potatoes
  • To cook: 1 tablespoon of extra virgin olive oil
  • 20 g of grated Parmesan cheese
  • 1 grated nutmeg
  • Q.b. of pepper
  • Q.b. of salt
  • 1 teaspoon of thyme
  • 20 g of cornstarch
  • 65 ml of milk
  • 120 g (2 medium) of eggs

  For the sauce

  • 125 g of yogurt
  • A few stalks of chives
  • 1 tablespoon of extra virgin olive oil
  • Q.b. of salt
  • Q.b. of pepper

  • Potato masher
  • Wooden spoon

  Preparation

  1. Boil the potatoes. Wash the potatoes to remove impurities and traces of soil.
  2. Dip the potatoes in a saucepan filled with cold water: bring to a boil and cook for 40-50 minutes, until soft. When the potatoes are cooked, drain them from the water and mash them with a potato masher to obtain a puree.
  3. Shell the eggs and divide the yolks from the whites.
  4. Season the mashed potatoes with salt, pepper, nutmeg and thyme, then add the milk, the grated Parmesan cheese, the two egg yolks and the corn starch: mix the mixture to obtain a fairly thick cream.
  5. Beat the egg whites until stiff and add them by spoonfuls to the potato mixture, taking care to mix from the bottom up to avoid letting the mixture go limp.
  6. Heat a skillet until it becomes red-hot. Grease the plate with a drop of oil and pour the batter in spoonfuls, leveling the surface to obtain discs with a thickness of about 1 cm.

  Attention!
  For an impeccable result, the plate must be hot: in fact, if you cook the pancakes on a warm or cold plate, the batter will tend to stick to the bottom.

  7. Maintain a high flame and turn the pancakes only after the crust has formed: cook each pancake for one minute on each side.
  8. Arrange the savory pancakes on a plate and keep warm before serving.
  9. Prepare a sauce by mixing plain yogurt, salt, pepper, chives and a little oil: accompany the potato pancakes with this sauce.
