These are milks in which the lipid component has been removed in whole or in part. According to current legislation:
- the skimmed milk must contain less than 0.3% fat
- partially skimmed milk between 1.5 and 1.8% fat
The milk is skimmed by centrifugation at 6500-7000 rpm.
Skimmed or semi-skimmed milk is sold pasteurized, UHT, concentrated or powdered.
From a nutritional point of view, skimmed milks bring fewer calories and are also dietary valid because they reduce the introduction of saturated fats.
Skimmed milk is also considered a dietary milk, suitable for example for those with hypercholesterolemia problems (since cholesterol, in itself, is a lipid and is therefore largely removed during the skimming process).
