What is Sole

There sole it is a product of the fishery that is very widespread and consumed almost all over the globe.

The term "sole" is extremely generic and includes many species that share the typical flattened and ellipsoidal shape, even if the families to which they belong are only two: Soleidae and Pleuronectidae. The Genus and Species of Sole are therefore very numerous but, in Italy, the one mainly captured and consumed is only one: the common sole (Soleidi family, Genus Solea, Species solea); the binomial nomenclature of the common sole is Solea solea.
The sole is known both for its typical shape and anatomical structure (the result of the evolution that allows a totally horizontal posture, ie on the side), and for the delicacy and leanness of the meat. The sole is also one of the simplest fish. to be filleted raw and at the end of cooking.
