Ingrediants
For the mussels
- 2 cloves of garlic
- 1 kg of mussels
- 20 ml of extra virgin olive oil
- An abundant grind of pepper
- Optional: 100 g of cherry tomatoes
- 1 bunch of parsley
- half a glass (100 ml) of dry white wine
To accompany
- 100 g of bread
Materials Needed
- Brush for cleaning mussels
- Bowl with water and salt
- Small knife to remove any algae
- Large saucepan with lid
- Food cutting board
Preparation
- Brush and clean the shells of the mussels with a small brush or by rubbing them vigorously together.
- Discard any broken or partially open mussels because the mollusk is dead and full of impurities.
- Rinse the mussels under running water: this is important to eliminate most of the sand and impurities trapped between the valves.
- Heat a large pot with a drizzle of oil, the garlic cloves and the cherry tomatoes. Add the mussels (paying attention to the splashes) and cook over high heat until they hatch. To facilitate hatching, shake the pot often.

The original recipe does not include cherry tomatoes in the making of this dish. Personally, I prefer the version with cherry tomatoes, but you can also avoid putting them.
Still, instead of white wine, it is possible to use lemon juice.- Towards the end of cooking, add plenty of pepper and chopped parsley.
- Serve the mussels with the previously filtered sauce and sliced bread.
