Ingrediants
- 300 g of apricots
- 300 g of carrots
- 200 g of melon pulp
- 300 ml of water
- 180 g of sugar

Preparation
- Prepare the syrup in time. Pour the water into a saucepan and bring to a boil, then add the sugar. Turn off the heat and stir until dissolved. Leave to cool completely.
- Meanwhile, peel the carrots and squeeze the juice using a juicer.
- Wash the apricots, cut them in half to remove the stone and put them together in a beaker.
- Clean the melon, cut it into slices and remove the zest. Cut the melon pulp into cubes and add them to the apricots. Add the carrot juice and blend everything with the immersion blender.
Deepening: the choice of ingredients
It is no coincidence that, to prepare this ice cream, we have chosen “orange pulp” fruit and vegetables. Carrots, melon, and apricots are foods rich in beta carotene, a vegetable pigment (precursor of Vitamin A) ranging in color from red to orange.
Beta carotene is a well-known antioxidant that gives us a darker complexion by protecting the skin from UV radiation. Furthermore, this substance stimulates the formation of melanin, strengthens the immune system and protects the cardiovascular system. Frequent consumption of foods rich in beta carotene also appears to protect the skin from sunburn.- Combine the resulting smoothie with the syrup and leave to cool for 8 hours.
- Pour the smoothie into the ice cream maker and leave to stir for 20 minutes or until the ice cream has taken on a thick consistency.
Without ice cream maker
Ice cream can also be obtained without an ice cream maker. In this case, it is necessary to pour the mixture onto a tray with low edges, then place it in the freezer for at least 4 hours: in this period, it is important to mix the ice cream very often to break the ice crystals, favoring its creaminess as much as possible.- Gather the ice cream in a tray and let it freeze for another hour before serving.
