We will use ready-made ingredients to show you that the cake is so easy that it can be described as "childproof".

- 300 g of sponge cake
- 150 g of custard
- 100 ml of milk
- 1 vial of vanilla flavoring
- 300 g of fresh cream or vegetable whipped cream
- 30 g of colored dragees of chocolate sprinkles

Preparation
- Prepare the sponge cake as shown in this video.
How do you prepare the sponge cake?
Shell 5 eggs and pour them into a bowl together with 150 g of powdered sugar and the grated rind of an organic lemon.Beat the comporto with electric whips for at least 15-20 minutes. Then gently mix the egg cream obtained (which must be puffy and soft) with 75 g of white flour and 75 g of rice starch or wheat starch. Pour the dough into a rectangular mold (dimensions: 30 X 40 cm) previously greased and floured. Bake in a preheated oven at 180 ° C for about 20 minutes.- Cut the sponge cake lengthwise until you have two sections.
- With parchment paper or a sheet of paper, draw a Carnival mask. Using the template, cut the sponge cake in the shape of a mask.
- Prepare the custard and weigh about 150 g. Place the custard in a pastry bag.
How is the custard made?
Cream the egg yolks with the sugar. Heat a part of milk (about 200 ml) in a saucepan. When the egg and sugar cream has taken on a foamy consistency, add the remaining part of cold milk and the flour (or starch), continuing to mix. Add the cream in the milk saucepan and mix with the whisk until the desired consistency is reached. Cover the custard with cling film to avoid the formation of the superficial skin. Allow the custard to cool completely.- Soak the sponge cake with the vanilla flavored milk. Fill the base of the mask with the custard. Cover with the other section of sponge cake, previously soaked.
- Whip the cream until stiff, adding icing sugar if necessary.
- Cover the entire surface of the mask with the cream and level with a spatula to form a very thin veil, taking care to distribute the cream also along the edges.
- At this point, cover the surface (avoiding the edges) with sprinkles or other colored chocolate sprinkles.
- Insert the whipped cream into the pastry bag with a star-shaped spout and make some decorations along the edges
- On the surface of the mask, create a grid instead (above the flanks), in order to obtain the typical “Harlequin” effect.
The chocolate variant
