- 500 g of sponge cake

Here we have proposed a sponge cake filled with custard and covered with chocolate ganache. Either way, the dessert can be customized. For example, you can use a yoghurt cake or a margherita cake base; the filling can be prepared with Chantilly cream or chocolate custard. Even the cover can be customized: you can prepare a simple custard, a water glaze or other creams as you like.- After having prepared the sponge cake and left to cool completely, it is possible to proceed with the cutting. Cut the cake in half of its height and, with a long blade knife, cut out two horizontal sections.
- With a skewer stick or a simple toothpick, lightly trace the shape of a tie on the surface. Once you have a satisfying design, cut the sponge cake following the outline.
- Remove the upper section of the "tie". Soak the base with the coffee prepared previously and fill with a generous layer of custard.
- Cover with the other section of sponge cake.
- Cover the whole cake with the chocolate ganache (prepared by mixing 1 part of dark chocolate with 1 part of cream).
- Roll out the white sugar paste with a rolling pin to a thickness of 6-7 mm. Cut the sugar paste with a knife, until it forms a tie. Place the "tie" of sugar paste on top of the sponge cake. Decorate the tie with strips of blue sugar paste.
- Leave the dessert to cool in the fridge for at least a couple of hours before serving.
