Ingredients for 8 servings
- Vegan product: 150 g of dark chocolate
- 150 ml of soy milk
- Vegan product with oats: 100 g of dry biscuits
- 100 g of brown sugar
- 100 g of almonds
Materials Needed
- Silicone molds
- Bowl
- Small saucepan
- Whip
- Mixer
- Scale weighs food
Preparation
- Coarsely chop the extra dark chocolate with a knife.
- Melt the chocolate pieces together with the soy milk or rice milk, stirring with the whisk.
- Meanwhile, mince the oat biscuits, almonds (with the peel) and the brown sugar with the electric blender.
Which cookies to use?
In this recipe we used vegan biscuits prepared with oats and peanut butter. It is however possible to buy dry biscuits - without milk, eggs and butter - ready-made.- In a bowl, combine the chopped biscuits, almonds and brown sugar together with the chocolate dissolved in vegetable milk. Mix all the ingredients until you get a thick cream.
- Spread the mixture into an 8-portion silicone mold. Place the mold on a tray and freeze for at least 4 hours.
- Remove the parfaits from the molds and serve as desired with fresh fruit, jam, vegetable cream or maple syrup.

Vegan Chocolate Semifreddo is a sweet food rich in carbohydrates and lipids; the proteins are instead lacking. The breakdown of fatty acids is in favor of the good ones and the fibers are abundant; cholesterol is absent.
