Here I am again, very ready, to prepare with you "another fun recipe. Today it is the turn of rice, the protagonist of the recipe that I am about to suggest: a rice that we will cook together with the delicious sour cherries in syrup to make a dessert different from the usually, without adding fats such as butter, cream or anything else. The result? Of course excellent! Let's find out together an alternative way to cook rice.

Ingrediants
Ingredients for 4 single-portion flans
- 150 g of rice
- 125 ml of water
- 100 ml of apple juice
- 100 ml of rice milk
- 1 sachet of vanillin
- 1 pinch of salt
- grated zest and untreated lemon juice
- About 100 g of sour cherries in syrup
- 1 teaspoon (optional) of rice flour
Materials Needed
- Silicone molds
- Casserole for cooking rice
- Immersion mixer and container
- Wooden ladle
- Colander
- Lemon grater
- Small pan to prepare the sauce
Preparation
- Pour the rice milk, the apple juice, the water and about ¾ of the black cherries in syrup (leaving aside a part of their syrup) into a beaker or another tall and narrow container: insert the immersion mixer and blend the everything, to form a sort of "sweet broth".
- Pour the liquid obtained into a small saucepan: when it has boiled, pour in the rice and continue cooking for about 15 minutes, over low heat, until all the liquid has been absorbed.
- After a few minutes from boiling, add the zest and filtered juice of half a lemon (preferably untreated), the vanillin sachet and a pinch of salt.
- Those who want to prepare a more aesthetically beautiful dessert can delight in the preparation of the accompanying sauce. Dissolve a teaspoon of rice flour in about 30 ml of water; pour the sour cherries syrup previously kept aside in a small pan. When the syrup starts to boil, add the water and the rice flour: mix with a wooden spoon until the sauce begins to thicken (it is necessary for the liquid to boil!).
- When cooked, distribute the sweet rice in 4 silicone molds and let it cool for at least 10-15 minutes, so that the dessert takes the shape of the mold.
The extra idea
To prepare an even richer dessert, you can add a few whole black cherries halfway through cooking the rice.- Turn the rice desserts upside down on a serving dish, decorating as desired with the sweet sauce, a few whole black cherries and a little grated lemon zest.
