Ghosts Come to Life on Witches' Day: Halloween is knocking on doors bringing with it a host of monstrous characters. Fruit is also transformed into magical figures; in particular, pears take on the appearance of real ghosts. How? Follow me to the kitchen!

Ingrediants
- 1 kg (4 large) of pears
- 300 ml of apple juice
- 1 tablespoon of cloves
- A few pieces of cinnamon
- Untreated lemon juice and zest
- 2-3 tablespoons of syrup or strawberry juice

Preparation
- Wash the pears and peel them with a potato peeler, leaving the stalk.
- Fit two cloves into each pear to represent the eyes of the "ghost".
- Place the whole pears (but with the stalk) in a saucepan. Add a few cinnamon sticks, the juice and zest of a lemon and the apple juice. Cook gently for 10-15 minutes.

Cooking times depend on the degree of ripeness of the fruit: the more ripe the pears, the shorter the cooking time will be. Pears are ready when they appear soft, but still remain firm.- When cooked, gently remove the pears from the aromatic juice and set aside. Reduce the juice over a high flame: in this way, the aroma of the spices will be more intense.
- Dissolve a couple of tablespoons of strawberry syrup on the apple reduction to obtain a sauce that resembles the color of blood.
- Assemble the ghosts. Place each pear on a saucer, leaving the small one facing up. Insert a coffee bean (or a piece of licorice) under the cloves to form the mouth.

If the base of the pears is not flat, it is advisable to cut an inch from the bottom: in this way, the ghosts will remain solid and stable!- Serve the pear ghosts by dripping the blood-colored apple and strawberry juice.

Pears Fantasma are a fruit-based dessert. The ingredients have a rather low calorie content but, due to dehydration during cooking, the nutritional concentration increases.
Calories are mainly provided by carbohydrates, while lipids and proteins are almost irrelevant. Carbohydrates appear simple (fructose), peptides have a low biological value and unsaturated fatty acids. Cholesterol is absent and fibers are abundant.
Ghost Pears are suitable for most nutritional regimes, including those for overweight, metabolic diseases, celiac disease, lactose intolerance, vegetarianism and veganism. However, it is not a product to be consumed in total freedom and the portion should be limited for those suffering from overweight, hyperglycemia and hypertriglyceridemia.
