- Cut a ripe avocado in half, lengthwise. Remove the core, possibly with the help of a knife. Peel each avocado half and cut out the pulp.

- Combine the avocado pulp in a blender, adding the lemon zest, the juice of one half, the agave syrup and, to taste, the vanilla essence.
- Blend intermittently until the mixture is reminiscent of the consistency of cream.
- The avocado “cream” is ready and can be used to decorate cupcakes, fill cakes or make cheesecake.

Those who want to obtain an avocado cream to enrich canapes, toast, croutons or sandwiches, can make the savory version.
