For the pastry
- 200 g of white flour of type 00
- Grated rind of untreated lemon
- 1 pinch of salt
- 20 g (1 medium) of egg yolks
- 60 g (1 medium) of eggs
- 40 ml of milk
- 40 g of butter
- 70 g of sugar
- 50 g of cornstarch
For the filling
- 100 g of apricot jam
- About 200 g of strawberries

- Pasta cutter or knife wheel
- Baking plate
- Baking paper

Preparation
- Prepare the light shortcrust pastry. In a bowl, sift the white flour and corn starch. Add the sugar, a pinch of salt and flavor with the zest of an organic lemon.

Corn starch makes the pastry softer and fluffier. As an alternative, wheat starch or rice starch can be used.
We did not use yeast in the recipe: in this way, during cooking, the pastry will keep its perfect shape.- In the center, add an egg and a yolk. Slightly heat the milk and soften the butter. Combine the mixture with the rest of the ingredients, then mix until you get a soft and non-sticky paste.
- Wrap the pastry on cling film and let it rest for half an hour: in this way, the dough will be easier to roll out.
- Take the pastry back and roll it out with a rolling pin until you get a sheet with a thickness of a few millimeters, taking care to leave the baking paper under the dough.
- With the tip of a knife or a stick, draw the shape of a fish with the fins, then engrave the pastry with a pastry wheel. With the scraps, make the edge of the fish, and stick it by pinching the dough with your hands. It is recommended to refer to the video.
- Create a small ball of pasta and set aside: it will serve to represent the eye of the fish.
- Arrange the parchment paper with the shape of the fish on a plate, then fill with a thin layer of apricot jam.
- Place the ball of pasta at eye level with the fish.
- Bake the tart in a preheated oven at 160 ° C for 20-25 minutes.
The alternative idea
As an alternative to jam, it is possible to fill the tart with custard.
In this case, the pastry will have to be cooked separately: for cooking, it is advisable to cover the dough with baking paper and dried legumes (which will prevent the pastry from swelling). The shortcrust shell is then baked in the oven at 160 ° C and left to cool. Subsequently, the pastry can be filled with custard and strawberries.- Meanwhile, clean the strawberries, wash them in cold running water, dry them and remove the stalk. Cut the strawberries into slices.
- Remove the tart from the oven and allow to cool.
- Decorate the tart with strawberry slices to create the "scales" effect of the fish.
- Serve.
