Ingrediants
For 6 bowls
- 1 liter of milk
- 200 g of rice
- 130 g of brown sugar
- 1 vanilla pod
- 40 g of bitter cocoa
To decorate
- Peel of untreated oranges
- 1 tablespoon of hazelnuts

Preparation
- Pour the milk into a saucepan and flavor with the vanilla essence (or with the seeds scraped from a pod). When the milk starts to boil, combine the rice, add the brown sugar and cook slowly for 20 minutes.
- At the end of cooking, add the unsweetened cocoa and continue cooking for another 5-10 minutes: the rice-milk will have taken on a creamy consistency.
The right advice
If the rice appears too liquid, it is advisable to thicken the mixture by adding a teaspoon of rice flour dissolved in a few tablespoons of milk.
For the vegan version, it is recommended to replace animal milk with any other type of vegetable milk (e.g. rice milk or coconut milk).
To prepare this recipe we used a rice rich in starch (Vialone Nano): it is however possible to use a brown rice but, in this case, it is advisable to extend cooking for at least 20 minutes.- Distribute the rice pudding in 6 single-portion bowls and allow to cool.
- Serve the rice pudding with orange zest and hazelnuts.

For an alternative version (but not suitable for celiacs) you can replace the rice with oat flakes: in this case, the mixture can cook for only 10 minutes to obtain a sort of porridge.
