Who said that you have to wait for the cold season to prepare the biscuits at home? Of course, in winter it is pleasant to spend time in the kitchen and bake fragrant biscuits in the oven! But I don't give up on cookies, not even in summer! So I would like to offer you some cookies cooked in a pan: very easy and delicious (perhaps even better than those baked in the oven)!

Ingrediants
For 25-30 cookies
- 170 g of white flour type 00
- 50 g of powdered sugar
- 60 g (1 medium) of eggs
- 35 g of butter
- 1 pinch of salt
- Untreated lemon juice and zest
- 2 g of baking powder

- Pan with lid
- Cookie cutter
- Sieve
Preparation
- In a bowl, sift the white flour with the icing sugar, then add the salt.
- Melt the butter gently, in the microwave or in a double boiler.
- In the center of the powders, combine an egg, melted butter, the juice and zest of an organic lemon. Mix the ingredients by adding the sifted yeast: you will get a sort of shortcrust pastry.
The alternative aroma
As an alternative to lemon, the pasta can be flavored with the seeds of a vanilla pod.- Wrap the dough on a sheet of cling film and let it rest for about ten minutes.
- Meanwhile, line a large pan (non-stick or stone) with baking paper; alternatively, lightly grease and flour the pan.
- Gently heat the pan lined with parchment paper, covering with the lid.
- Meanwhile, roll out the dough with a rolling pin until you get a sheet with a thickness of about half a centimeter. To facilitate the drafting, it is advisable to cover the pastry with baking paper or to flour the surface.
- With a cookie cutter with the shape of your choice, make the molds. The scraps of dough can be kneaded again to obtain other biscuits.
- Place the biscuits on the pan, taking care not to overlap them. Cover immediately with the lid and cook over a very low flame for 10 minutes. After the necessary time, open the lid, turn the biscuits and finish cooking for another 5 minutes.
- Remove the biscuits from the plate and serve to taste. Store in a tin can or plastic tray for 2-3 weeks.
- The pan-fried biscuits are delicious to serve stuffed with hazelnut cream or jam, or you can sprinkle them with simple icing sugar.
